Sweet beet egg salad, a recipe for after weight loss surgery

Living life after weight loss surgery is all about making healthy food choices and maintaining a balanced diet that can help you shed pounds after bariatric surgery. As a post-op patient, it’s crucial for you to help your body adjust to the change in weight loss and diet. It’s important to make sure you are getting the right amount of protein, vitamins, and minerals all while you are losing weight. 

When it comes to needing key nutrients you can never go wrong with our new sweet beet egg salad. Along with how quick and easy this meal is to recreate, it’s also packed with many the necessary nutrients a bariatric patient needs. 

If you’ve never had beets then you need to be aware of the nutrients you are missing out on! Made up of 88% water, this vegetable is loaded with essential nutrients such as fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. 

Beetroots have even been associated with numerous health benefits including improved blood flow and lower blood pressure. 

As balanced as this recipe is, it also had a sweet side to it as well, but don’t worry, we used a small amount of pickled beets. The 1/2 apple in this recipe blended very well, bringing in more sweet flavors. Dress up your traditional egg salad with pickled beets for your week’s meal prep, outdoor cookouts, or even as a desk lunch.

3 Hard Boiled Eggs – Chopped

2 Pickled Beets – Chopped

1/2 Small Apple – Diced

1T Lite or Sugar–free Mayo (vegan mayo is tasty too)

¼ C Walnuts- Chopped

Salt and pepper


  1. Place your chopped boiled eggs into a mixing bowl
  2. Add all of your ingredients in and stir until well mixed
  3. Cover and refrigerate until chilled
