We have been on a meatball kick for a few weeks over here at WLS Afterlife. You may have seen our Cheddar Bacon Ranch Meatballs a few weeks back. We have also done some Air Fryer Italian Meatballs. There is also a Burger Bites recipe using meatballs. They are such an easy bariatric recipe and you can see that they are also easy to mix up using different seasonings and proteins.
We only used 1/2 lb of meat in our recipe, but feel free to double the recipe and share with friends and family or make a larger batch for your meal prep for the week.
Such an easy recipe and you should have most of these ingredients on hand. Don’t forget that you can always change out your protein with chicken, turkey or beef.

If you are coming up short with your daily protein goals, you can mix in some unflavored protein powder when you are mixing up these stuffed meatballs. It won’t change the flavor at all and it will get you closer to your protein goal.

Ingredients for Cheesy Stuffed Meatballs
½ lb ground chicken (you can use turkey or lean ground beef as well)
½ package onion soup mix
1 large egg, scrambled
1 light mozzarella string cheese stick
Optional ingredient: 1 scoop unflavored protein powder
Directions
Cut your mozzarella stick into 6 equal pieces
Using gloves, mix your ground chicken, onion soup mix and eggs with your hands.
Make sure your ingredients are thoroughly combined.
Cup 1/6th of the mixture in your hand and add 1/6th of the mozzarella (1 piece)
into the center of the mixture and mold the mixture around the cheese, forming
a meatball.
Set your oven to 350° and bake for 30 minutes.
Serve and enjoy!
