Chocolate covered strawberries are played out, and most of us after weight loss surgery aren’t taking our chances with a box of chocolates. With that in mind, we figured it was time to celebrate love (maybe Valentine’s day) and make something festive we can enjoy eating! For that, we turned to the tasty line of Jel desserts and puddings from Simply Delish! They found a perfect balance between sweet treats that are also sugar-free, vegan, and keto-friendly! What more could you ask for?! So naturally, we grabbed our favorite flavor of Jel (a pretty pink Raspberry, perfect for Valentine’s Day) and threw in some raspberries for added texture. For the Cool Whip, definitely grab sugar-free! The consistency doesn’t change at all, and the flavor is on par with the full sugar alternative. It’s worth the substitution, trust us! And be sure to fold it in gently so that the dessert retains the fluffy texture of the whip! The goal is a light and airy sweet!

To really layer on the love, we grabbed a precious heart-shaped mold to pour the Jel into. You can grab a really cheap one at a dollar store, or use mini bowls to pour the mold into for small, personal desserts. Then it was off to the fridge to let it set! Which honestly is the hardest part. Waiting patiently is nearly impossible when you know there’s a delicious sweet in the fridge!

Once you’ve waited your time and the mold has set, run a knife around the perimeter of the mold to free it from the casing. Place a plate on top and then carefully flip to release the finished product onto your plate! You can decorate the top with an extra layer of Cool Whip and raspberries, or just dig in! Either way, we hope you fall in love with this low-sugar delight. Enjoy!

A few notes on the recipe:

We used the Simply Delish line of jel/gelatin desserts and they set faster than other brands that we have used in the past.  So, make sure you follow the directions for the amounts of water and the time to set, based on the brand that you use.  Also, drain your fruit really well.  It can hold a lot of moisture and keep your gelatin from getting to the right consistency.  Also, if you really want the gel to hold the shape of the mold for presentation, place your dessert in the freezer for at least 30 minutes before serving.  Be careful not to leave too long, or it may freeze.


  • 2 (.7 oz) packets of Simply Delish Raspberry Jel Dessert
  • Frozen raspberries
  • Sugar-free Cool Whip


  1. Dissolve 2 packets in 2/3 cup of cool water.
  2. Stir in 2 2/3 cup boiling water.
  3. Add in frozen raspberries (drained well) set it aside to cool.
  4. When Jel has cooled to room temperature, fold in the Cool Whip.
  5. Pour into decorative molds and refrigerate until set.
  6. 30 minutes before serving, move to freezer to really set the mold.
  7. Remove from mold and enjoy!
