Mushroom Kale Egg Bites with the Dash Deluxe Egg Bite Maker

Brighten your morning routine with our new Mushroom Kale Egg Bites recipe. Your newly restricted stomach and taste buds will thank you. Our egg bites recipe is inspired by Starbucks’ Kale & Mushroom Egg Bites.

 In comparison, our recipe has a bariatric spin and is low-calorie. Despite our healthy take on this popular food item, we most certainly did not miss the mark on flavor. 

Unlike Starbucks’ recipe, our Mushroom Kale Egg Bites recipe has fewer dairy products. This makes our WLS Afterlife version more weight watcher-friendly. We used dairy free ricotta cheese and shredded mozzarella.

For those who are dairy intolerant, you can easily find dairy-free mozzarella and ricotta at your local supermarket. Along with the cheeses, we’ve added mushrooms, kale, and minced garlic for flavor. 

When it came to preparing this entire recipe we used an egg bite maker. If you don’t have one in your kitchen, using a cupcake tin will work just fine. If you’d like to go further in creating an even healthier version of this recipe and don’t mind sacrificing a little bit of flavor for less cholesterol, you could do just the egg whites.

1/8C water

1/2C chopped mushroom

1/2t minced garlic

1C chopped kale

2 eggs

1/4C shredded mozzarella

2T ricotta cheese

Salt & pepper to taste

Non-stick spray


1. Add water, mushrooms and garlic to pan. Sautee for about 3 minutes.

2. Turn off heat, add kale and stir until wilted.

3. In a bowl combine eggs, mozzarella cheese, ricotta cheese and salt & pepper. Blend together.

4. Prepare the egg maker by filling one of the small silicone cups with water, and pour it onto the heating plate.

5. Spray small cups with non-stick spray

6. Fill cups 2/3 with egg mixture. Add mushroom kale mixture and stir in.

7. Carefully place cups in the egg maker. Allow egg bites to cook for approximately

7-10 minutes, or until the water on the cooking surface has completely evaporated.

8. Carefully remove cups from egg maker.
