This low carb breakfast casserole recipe has very simple ingredients, egg, ground turkey, onions, spinach, and we even topped it off with our favorite salsa. We did learn while recreating this a second time that this recipe can also be garnished off with guacamole in substitution for the salsa, and it was equally amazing. 

Eggs are an excellent source of vitamin D and protein. Spinach can provide you with the right amount of fiber to start your day and is also a great source of protein. Ground turkey is very lean compared to ground beef and is also your third source of protein in this recipe. Overall, this breakfast casserole is the perfect way to start your day off if you’re a post-op bariatric patient.

Low Carb Breakfast Casserole Ingredients

1/4 Onion- Chopped

2C Spinach

1/2lb Ground Turkey

5 Eggs

Salt & Pepper to taste

Salsa as garnish



Directions

Spray pan with non-stick spray

Sauté onion for 2-3 minutes

Add and brown ground turkey

Add spinach and sauté for 1-2 minutes

Add mixture to loaf pan sprayed with non-stick spray

Whisk eggs with salt and pepper

Pour over mixture in loaf pan

Bake at 350° for 25 minutes
