It’s not until later in the day that you start realizing the negative side effects of an unbalanced breakfast. Some people quickly grab a breakfast bar that has too much sugar and they start experiencing minor symptoms of dumping syndrome. 

The good news is that you’re here and WLS Afterlife has the perfect solution for you. Whether you’re a morning person or not, our breakfast casserole recipe is a meal you cannot pass up. Aside from being delicious, this recipe is dairy-free, low carb, and perfect for meal prepping for a few days. 

Start your day off right with an exceptional amount of protein and flavor. Cut out the high carb, processed, on-the-go breakfast snacks and bring our breakfast casserole to your kitchen. 

This recipe has very simple ingredients, egg, ground turkey, onions, spinach, and we even topped it off with our favorite salsa. We did learn while recreating this a second time that this recipe can also be garnished off with guacamole in substitution for the salsa, and it was equally amazing. 

Eggs are an excellent source of vitamin D and protein. Spinach can provide you with the right amount of fiber to start your day and is also a great source of protein. Ground turkey is very lean compared to ground beef and is also your third source of protein in this recipe. Overall, this breakfast casserole is the perfect way to start your day off if you’re a post-op bariatric patient.

Your newly restricted or resized stomach and taste buds will be very thankful. With this breakfast casserole, you don’t have to worry about feeling sluggish, and your morning appetite will definitely be quenched. 1/4 Onion- Chopped

2C Spinach

1/2lb Ground Turkey

5 Eggs

Salt & Pepper to taste

Salsa as garnish


Spray pan with non-stick spray

Sauté onion for 2-3 minutes

Add and brown ground turkey

Add spinach and sauté for 1-2 minutes

Add mixture to loaf pan sprayed with non-stick spray

Whisk eggs with salt and pepper

Pour over mixture in loaf pan

Bake at 350° for 25 minutes
