What makes our egg salad kick? Chinese hot mustard! We only added one teaspoon and the kick was perfect. With that said, we understand that not all bariatric stomachs are made equal. So for post-op weight loss surgery patients that have a higher tolerance to spiciness, you can add a second teaspoon of Chinese hot mustard if desired. If you aren’t tolerating much spice, cut down to ½ a teaspoon.
This recipe was very simple and easy to make, and once the ingredients sit together in the fridge, you’ll have a spicy dish to chow down on by itself or even on a lettuce wrap.
Aside from how delicious this meal is, it also holds a great nutritional value. Best of all, adding salt and pepper is completely optional. After recreating this a few times our team came to realize the flavors of the lite mayo, chinese mustard, chopped-up celery, and dill relish, were bold enough.

Ingredients
3 hard-boiled eggs (chopped)
1T lite mayo
1t of hot Chinese mustard
1 celery stalk (chopped)
1/2t of dill relish
Paprika
Salt & Pepper
Directions
- With your chopped up hard-boiled eggs in a medium-size mixing bowl, add all of your ingredients into the same bowl
- Stir until well mixed
- Cover and refrigerate until chilled
