It’s no secret that we love bariatric recipes with a Mexican flare at WLS Afterlife. We have made mini shrimp tacos, airfryer steak tacos, and even a Mexican egg skillet recipe, just to name a few. This one has a great flavor, with a little kick and as a bonus, it’s made in muffin tins to help with portion control after bariatric surgery.
If you are planning your meals for the week, you can chop up the onion and peppers for this recipe and use the leftovers for plenty of our other bariatric recipes. While this recipe video shows only 6 mini meatloaves, there was plenty left over. We baked the remainder in a regular meatloaf pan, so there are different ways to store or serve this bariatric dish.
You can see from the ingredients below, it’s a fairly easy recipe to make. There are not many ingredients needed, but the flavor is great. Don’t forget that you can always change out your protein with chicken, turkey or beef.

Be careful when you mix the ingredients to not smash the black beans. I large spoon or spatula should be a great option to get all of the fiesta mini meatloaf ingredients mixed together
