Any time we can mix in some Mexican flavors into one of our bariatric recipes, you know we are going to share it. This was a fun recipe to create. One day we just opened the office pantry and saw Rotel and refried beans. We had been doing some bariatric breakfast recipes and had eggs in the fridge, so we put together this Mexican Egg Skillet.
We had plenty of refried beans, cheese, Rotel and eggs left over, so this is a great way to start some meal prep for the week (or at least meal planning, you may not want to make a batch of this and then try to reheat)
One to the dish. It was super easy to prepare, quick to make and the clean up was a snap. Some of our favorite things with bariatric cooking. Our goal is to create recipes that will help patients enjoy eating after weight loss surgery. This one should be a new favorite, especially if you love mexican food.

You can also add some additional spices or peppers to really play off the mexican flavors, just be careful if you are only a few weeks/months after surgery. You may not tolerate spices so well right after surgery.

Ingredients for Mexican Egg Skillet
1/2 cup non-fat refried beans
1 egg, lightly beatened
1 tsp Rotel Tomatoes
Pinch of shredded cheddar cheese
Directions
Turn your stove on to medium heat and warm your pan.
When your pan is warm, add in the refried beans and create a circle (or well),
leaving the center empty.
Add your egg into the center of your beans and cover the pan with a lid for 7 minutes.
Uncover the pan and add in the Rotels onto the egg and top with cheese.
Turn off the heat and let it sit for a minute, letting the cheese melt.
With a spatula, scoop everything out and place onto a plate.
Serve and enjoy!
