Our low-carb cauliflower stuffing is a shining example that you don’t need bread to make delicious stuffing. Savor your favorite holiday dish and cut out unnecessary carbs this year.

By cutting out the bread, you cut out the carbs and have a wonderful gluten-free holiday dish. Best of all, our cauliflower recipe can be assembled with just a pan and your stovetop. Leaving you more room in your kitchen for holiday preparation.
For our cauliflower stuffing, we incorporated shallots into our recipe. Shallots are great at providing a slight sweetness to any dish and our team took full advantage of that which brought in more flavor to our recipe in an organic fashion. If you’re looking to keep this recipe more traditional, a regular white onion will also blend well into your cauliflower stuffing.
Aside from being an excellent source of vitamins and fiber, cauliflower also acts like a sponge. Meaning, it’s excellent at soaking up all of the flavors from the ingredients it’s cooked with. Which balances out well for you as a post-op bariatric patient. Just because you cut out carbs does not mean you miss out on flavor!

Cauliflower Stuffing Ingredients
1 10oz package of riced cauliflower
2 carrots
2 celery stalks
1 shallot
1tsp minced garlic
1/2t rosemary
1C chicken stock
Salt & pepper to taste

Directions
1. Chop carrots, celery, and shallot, then saute on med-high heat for about 5 minutes
2. Add garlic and cook additional 1-2 minutes
3. Add cauliflower, sage, and rosemary and cook additional 1-2 minutes
4. Pour in chicken stock, cover, and cook (stirring often) for 15 minutes – till all liquid has evaporated.
