There is the typical bacon bits, sausage chunks, and sometimes even tofu, but did you even consider shredded chicken in an omelet? It makes so much sense when you think about it, flavor-wise, but it’s rarely the first thing we think of when it’s time for a morning low-carb bariatric meal! And why isn’t it? It’s low-fat and high in protein. We tend to keep grilled chicken stocked in the office fridge for grab meals like this!
We are pretty great at making meals on the fly, but if we don’t have a healthy base (protein, veggie, and the occasional healthy starch) then it’s pretty dang difficult to make a balanced meal! We usually keep canned black beans in the pantry because they offer a quick and easy dose of protein and fiber to most any meal. And salsa? It’d be harder for us to find a meal that DOESN’T taste better with salsa, so you can bet your sweet bippy we keep that in the fridge at all times!
The chicken is a bit of a tougher on to keep handy simply because of the short shelf life, but since there are a few of us at the office, It doesn’t go to waste.
This black bean and chicken omelet recipe makes two bariatric portions, so make some for yourself and maybe your office breakfast buddy If you like to spice up your food, you could always chop up some jalapenos and sauté them in the skillet before adding the egg.
Pro-tip, remove the seeds before sauteing to control the heat a bit! If you happen to have avocado slices and either Greek yogurt or low-fat sour cream, you could throw those on top as well to really drive home the south-of-the-border feel this omelet has! We just love how most recipes like that call for so many veggies. The range of color it gives the plate is satisfying to both our eyes and tastebuds!

Ingredients
• 1 egg
• 3 tbsp black beans
• ½ c Spinach
• 2 oz. (about ¼ c) pre-grilled chicken
Directions
- Spray skillet with nonstick spray.
- Cook spinach in pan first then set aside
- Add 1 egg to skillet, add salt and pepper to taste. Scramble and cook until lightly golden.
- Add cooked spinach, chicken, and beans. Fold in half, making sure both sides are golden.
- Split the black bean and chicken omelet in half
- Garnish with salsa and enjoy!
