We loved the original version of this recipe so much, we created a vegetarian twist for our bariatric followers who are meat-free! We substituted tofu for the meat used in our taco casserole recipe.
If you’re looking for a low-carb substitute for tacos or your favorite Mexican dish after weight loss surgery – look no further. This is the one for you.
We used tofu as a protein filler in this recipe, and boy, was it delicious! We used the Ozeri food scale

The great thing about our bariatric recipes is that they do not lack flavor either. Just because you are eating healthy, does not mean you have to eat bland meals. Vegetarian Stovetop Taco Casserole | Bariatric Surgery Recipe




Ingredients
1 lb Tofu
1 pack of taco seasoning
Avocado cooking oil
1 small yellow onion chopped
1 small zucchini chopped
1 Tbsp minced garlic
8 oz Rotel
½ can black beans
2 cups shredded mexican blend cheese
Cilantro chopped
Directions
- Heat avocado oil in pan and fry tofu until golden brown.
- Saute onion, zucchini, and minced garlic until soft.
- Add Rotel, tofu, black beans, and taco seasoning. Mix.
- Cover and simmer.
- Top evenly with cheese and cover until cheese is melted.
- Garnish with cilantro.
- Serve and enjoy!
