This recipe uses a small avocado and we’ve portioned out all the ingredients specifically for those who have restricted stomachs. This dish will have you surprised by the fiesta that is created in your mouth after your first bite. Best of all, it’s a much healthier take on your favorite Mexican taco. From beginning to end, this meal is easy to create and requires simple ingredients.
Depending on how dairy has affected you post-bariatric surgery, you may want to consider going with dairy-free sour cream and cheese. If you have no dairy restrictions then regular light sour cream and cheese will also do!

Taco Stuffed Avocado Ingredients
1T olive oil
¼ chopped onions
½ ground turkey
½ packet of taco seasoning
½ small avocado
Shredded spinach
Cherry tomatoes
Shredded cheese
Lime
Light sour cream
Estimated Total Nutrition (for 1 serving):
- Calories: ~400-450 kcal
- Protein: ~30g (from ground turkey, cheese, and avocado)
- Carbs: ~15g (mainly from avocado, tomatoes, and spinach)
- Fat: ~25g (from olive oil, avocado, and ground turkey)
Directions
Add 1T of olive oil to your cooking pan
Add ¼ chopped onions, and cook until tender
Mix your ½ ground turkey meat, and ½ taco seasoning into your cooking pan
Cook until meat is no longer pink
Carve out a portion in the center of your avocado to make room for your turkey
Place your taco meat into your avocado
Add shredded spinach
Add quartered cherry tomatoes
Sprinkle shredded cheese
Re-add the carved out avocado portion on top
Squeeze juice from lime
Top with dollop of light sour cream
