With the holiday season finally here, it’s easy for people to give up on their weight loss goals or give in to the wrong foods that can set them back in their diet. What makes our slow cooker turkey legs recipe so special aside from being completely bariatric-friendly is we’ve managed to cut back on calories but not in flavor.

While creating the gravy for this recipe, it was an easy decision to go with almond flour because almond flour contains less carbs than most other flours. In efforts for a lower calorie turkey leg, we cooked our ingredients in avocado oil which is commonly used as a butter substitute and is vitamin rich.
To get the most flavor out of your turkey leg, it’s important to keep the skin on until you’re ready to serve. We learned that keeping the skin on while you cook will keep the turkey tender and moist. Prior to serving, we suggest removing the skin and discarding it. This will also help you cut out unwanted calories. We are not suggesting that 1 turkey leg is a serving, so use a food scale to measure your turkey before you plate it.

Our favorite feature about this recipe was our gravy pour. One key ingredient that helped contribute to the flavor of our gravy, was the shallots. The difference between shallots and onions is all in the flavor. As opposed to onions, shallots have a milder taste and odor. Best of all, shallots are also known to be a little sweeter, so they brought in a hint of sweetness to our gravy and turkey legs.

Ingredients
2T avocado oil – divided
2 bone in turkey thighs
1 shallot – chopped
1T minced garlic
2T thyme
1 1/2C chicken stock
2T almond flour
Salt, pepper & parsley to taste

Directions
1.Spray pan with non-stick spray and add turkey legs
2. Season turkey with salt & pepper, cook on medium heat – both sides until brown –
about 4 minutes each side
3. Remove turkey legs from pan and add a drizzle of avocado oil
4. Add 1 shallot – chopped, 1T minced garlic, 2T thyme, stir constantly, cook 30 seconds
5. Add 1 1/2C chicken stock, bring to a boil, stir and scrape the bottom of the pan
6. Add turkey legs and mixture to slow cooker, cover, and cook on low 4.5 hours
7. Remove the turkey legs and strain mixture into a pot – discard the solids
8. Combine 1T avocado oil & 2T almond flour to make a paste and add to pot
9. Bring mixture to a boil, whisk in the paste, season with parsley and salt
10. Remove meat from the bone and top with gravy
