This boneless chicken breast stayed juicy and tender while it baked on a bed of corn, black beans, and salsa. While we do have some carbs in this recipe, there are not a lot of calories from added sugar. 1/2 C Frozen Corn
1 Can Black Beans – Drained
1 1/2 C Salsa – Divided (Make sure it’s no sugar added)
1/2 t Cumin
1 t Minced Garlic
2 Small Boneless Chicken Breasts – Cut in Half
Salt & Pepper
Mix corn, beans, 1 C salsa, cumin and garlic together.
Spray a loaf pan with non-stick spray.
Add salsa mixture to dish.
Salt and pepper chicken and lay on top of mixture.
Top with remaining ½ cup salsa.
Bake at 350° for 30 minutes.
