There are so many things to love about our salmon cakes. For starters, they’re low carb, because we chose to use almond flour instead of regular. Almond flour is more nutrient-dense than wheat and coconut flour. We also incorporated vegan mayo instead of regular. Vegan mayo is generally a bit healthier than dairy-based mayo and also contains less saturated fat.

1 egg (beaten)

1 can of Safe Catch Salmon

1/2T Dijon mustard

1/4C almond flour

1/8C mayo

1/2t garlic powder

1/2t lemon juice

1T sliced green onions

1T fresh parsley


1. Plug in the egg bite maker and add 1 cup full of water

2. In a bowl, mix egg, Safe Catch Salmon, Dijon mustard, almond flour, mayo, garlic powder, lemon juice, sliced green onions and fresh parsley. Mix together. If the mixture is too wet, add 1T almond flour.

3. Spoon mixture into egg bite cups.

4. Carefully place cups in the egg maker. Allow salmon cakes to cook for approximately 20 minutes, or until the water on the cooking surface has completely evaporated.

5. Carefully remove cups from the egg maker. Repeat.
