Our new Mediterranean chicken is the perfect weeknight dinner. Best of all, with only a limited amount of ingredients, it takes very little prep time all while packing lots of flavors. For bariatric patients who are beyond their soft food phase who are looking for a filling meal, this will be a new go-to.

The flavor inspiration we incorporated into this dish is very greek. With a little basil seasoning, along with a few other ingredients, sun dried tomatoes, Kalamata olives, and feta cheese, we were able to create a mouth-watering dish.

What our team loved most about this dish is that you can tweak it to your liking. If you wanted to add a bit more seasoning then we recommend adding some fresh parsley. If you’re sensitive to dairy, then incorporating a dairy-free feta cheese is also an option for you. Lastly, this dish is an excellent source of protein, but if you’re wanting to give yourself a bit more, then adding some spinach would be an excellent addition to this recipe.

Mediterranean Chicken Ingredients
2 small chicken breasts
½ C Sun dried tomatoes
⅓ C Kalamata olives
½ C Feta cheese
Dried basil seasoning
Salt and pepper

Directions
- Spray loaf pan with non-stick spray
- Cut in half, two small chicken breasts and season with dried basil, salt, and pepper
- In a small mixing bowl place your ½ C of sun dried tomatoes, ⅓ C kalamata olives, and ½ C of feta cheese
- Pour the ingredients in your mixing bowl over your chicken
- Bake at 350 degrees for 25-30 minutes
