This week we’re serving you big flavor with our low-carb lasagna with Palmini pasta substitute! Don’t let any dietary restrictions scare you from enjoying delicious flavors. When it comes to living life after weight loss surgery, you don’t have to torture yourself with bland foods. This recipe is proof that you can incorporate flavor while staying within the nutritional requirements instructed by your surgeon or nutritionist.
Pasta in general has a bad rep for being very high in carbs. With that in mind, don’t worry, we have good reasons as to why you should try this recipe. For starters, you’ll spend less time prepping and cooking this meal than you would regular lasagna. Cooking Lasagna noodles almost feels like an eternity, but with Palmini, pasta substitute noodles it’s quite the opposite. The reason being is because Palmini pasta noodles come ready to eat, so they don’t need to be cooked, which saves you lots of time in the kitchen.
Secondly, not only do Palmini noodles save you time, but they also save you from loading up on carbs. Palmini products are made from hearts of palm, a vegetable which has a similar texture to pasta. Two sheets of Lasagna noodles have roughly about 35 grams of carbs. Palmini noodles on the other hand are only 4 grams of carbs per serving!

1 Can Palmini Lasagna
1/2 lb Ground Turkey
1/4 Onion – Chopped
1T Minced Garlic
8 oz. Ricotta Cheese (or dairy free ricotta cheese)
Drizzle olive oil
1 Jar Marinara Sauce – no sugar added
Drizzle olive oil
Sauté onions, garlic and thyme (about 5 minutes)
Add ground turkey and brown
Spread marinara sauce on bottom of loaf pan
Layer Palmini noodles, meat, sauce
Repeat 2 more times
Top with Ricotta cheese
Bake at 350° for 20 minutes
