While we have used quinoa a few times in our bariatric recipes, this is the first time with a breakfast recipe. It was tasty and very filling. If you like a savory breakfast dish, this is a great one to try.
Since we love to meal prep, we went ahead and cooked 1 cup of quinoa but only used 1/4 cup for this recipe. We set it aside to be used in another healthy bariatric recipe. If you plan your meals well ahead of time, it will really help you to stay on track with your bariatric diet.
This meal was super easy to prepare, quick to make and the clean up was a snap. Some of our favorite things with bariatric cooking. Our goal is to create recipes that will help patients enjoy eating after weight loss surgery.
While this recipe contains scrambled eggs, it would not be a great recipe to try during the soft food stage. The quinoa and spinach would be a little too hard to digest and could cause some discomfort. Please hold off on this recipe until you are further out from surgery.
You should also remember to watch your portions and stick to the plan from your surgeon. You may not be able to eat a whole egg, plus the quinoa and spinach until a little later in your journey. That first year to year and a half after weight loss surgery is the best time to adjust to new portions and lower calorie intakes.
We also know how important it is to hit your daily protein goals after weight loss surgery. Spinach is a great way to sneak in more protein. Cooking with it or blending it into other recipes, helps a lot. It really has a great flavor!
