Our cilantro egg salad is very simple to re-create and delicious! Our team went with sugar-free mayonnaise which is definitely recommended. If you are able to limit your sugar intake, do so by all means! Best of all, you won’t be able to taste the difference with sugar-free mayo.

3 hard-boiled eggs (chopped)
1T lite or sugar–free mayo (vega mayo is tasty too)
¼ C cilantro (chopped)
1T dijon mustard
1T lemon juice
1T lime juice
1 celery stalk (diced)
Salt and pepper
- Place your chopped boiled eggs into a mixing bowl
- Add all of your ingredients in and stir until well mixed
- Cover and refrigerate until chilled
