This puree is an explosion of Mexican-inspired flavors that will have you looking forward to your next meal. For those of you who have passed your puree phase, you can still enjoy this recipe as a side dish for your favorite Mexican dish.

If you really want to take this recipe to the next level in flavor, you can top it off with a dollop of our Tomatillo Verde salsa. If you are still in the pureed stage, make sure both are completely pureed.

If you’re planning on re-creating this recipe, let us know on social media. We’d love to see how you enjoy it!

Overall this recipe was super easy to make. We used an immersion blender which is a handy bariatric kitchen tool. The immersion blender is well known for making the smoothest purees and salsa. We’ve used it in several of our videos and even did a product review on it which you can find here

As always, we recommend our WLS Afterlife viewers follow their doctor’s dietary guidelines, regardless of our recipe instructions. WLS Afterlife is dedicated to presenting new bariatric-friendly meals weekly so you can continue to enjoy the life you’ve worked so hard to enjoy!  If we listed an ingredient you were told to avoid, write to us so we may provide you with plenty of other tasty alternatives.

You can also purchase your very own immersion blender here.
