Here in Texas, Summer is in full force- that makes us pro’s at finding light, yet filling recipes that’ll get you through the day. Imagine eating a steak or another heavy meal then walking out into 100° weather… that sounds like a recipe for an upset stomach or for exhaustion.
With this light & flavorful bariatric shrimp salad recipe, you’ll get in your protein for the day, feel full, but not feel bogged down. Then you can finish the rest of your summer day off with a bang; whether you’re in 80° weather or 100° weather. Of course, there is nothing stopping you from making this recipe any other time of the year.

This recipe is SIMPLE. Cook your shrimp, mix your sauce, and throw a bunch of vegetables in a bowl- and there you have it! This recipe is what we call a Texas-style shrimp salad with a creamy twist. If there would have been any leftover after everyone at the office had some, we are sure that this would be a great meal to add into your bariatric meal prep. No one wants to get bored eating the same meals every week, so why not mix things up and put this bariatric meal into the rotation of lunch ideas for gastric sleeve or gastric bypass dieting.

Bariatric Friendly, Texas-Style Shrimp Salad Recipe
8 oz peeled & deveined cooked shrimp (tails removed)
¼ cup diced red bell pepper
¼ cup sweet corn kernels
¼ cup diced onions
¼ cup diced tomatoes
1 Tbsp parsley
1 tsp horseradish sauce
1Tbsp low-fat sour cream
1 Tbsp dijon mustard
1 tsp honey (or sugar-free syrup)
1 Tbsp lemon juice
1. Cook your shrimp in a skillet (2 mins each side)
2. Combine all sauce ingredients in a bowl and mix
3. Combine your shrimp, sauce, and the rest of the ingredients in a separate bowl and mix
4. Garnish with parsley
5. Serve & Enjoy!
