To snack or not to snack? If you’re a weight loss surgery patient, chances are you’ve pondered  this very thought. As you should, considering most foods that used to be your go-to snack before surgery are now categorized by your doctor or nutritionist as a “slider” food. Slider foods are notorious for falling quickly through your newly restricted stomach, which isn’t ideal for any weight loss surgery patient.

We get it, sticking to your dietary guidelines can feel more like a chore at times. If you’ve felt like this recently in your weight loss journey then more than likely you’ve started to feel unmotivated which can cause you to get off track from your diet. So if you’ve been struggling or simply looking for a snack that won’t set you back, then you’ve come to the right place. 

Our banana (walnut) nut muffins are the perfect treat, whether it be on your commute to work, or you simply need a snack to satisfy that food itch. This recipe is great for those times when you’re in need of an on-the-go snack; this recipe alone doesn’t hold a high protein value, however, this keto-friendly, sugar-free snack won’t rack up your carb count either. 

We combined Nush Pancake mix and Simply Delish Banana Pudding mix. Nush Pancake mix is low-carb, gluten-free and keto-friendly. Simply Delish Banana Pudding mix is sugar and gluten free, as well as low calorie. Even when it comes to treating yourself to a snack, you should always select your ingredients carefully, otherwise you could be at risk of dumping syndrome.

What’s great about this recipe is, if you’d like to upgrade this snack to be a bit more nutritional, then you have the option to do so. If you’re looking to up your protein then we recommend adding unflavored protein powder to your mixes. Just be sure to increase your liquids according to the amount of protein powder you add. To add a little bit of nutrition, our team decided to add walnuts into this recipe. Aside from the satisfying crunch that comes with, walnuts are low carb, rich in heart-healthy fats and can help improve blood sugar management.

Ingredients

1/2 C Nush Pancake Mix (you can buy Nush here https://bit.ly/3sMp5l4)

1 Box Simply Delish Banana Pudding Mix (you can buy Simply Delish here https://bit.ly/3sMp5l4)

1 Egg

1T Coconut Oil

1/2 C Unsweetened Almond Milk

1/4 C Chopped Walnuts



Directions

1. Add all ingredients expect walnut to bowl and mix well

2. Fold in the walnuts

3. Spray muffin pan with non-stick spray

4. Fill each cup 2/3 with mixture

5. Bake at 350° for 13 minutes
