Ooey, gooey, and oh so satisfying! This Ricotta Bake is likely the closest you’re going to get to a puree-friendly pizza!

If you are finishing up your full liquids phase after weight loss surgery, you have probably been looking forwad to pureed foods and have no doubt heard how wonderful the ricotta bake is! This is probably our most looked up recipe online! So close to a pizza, but since it’s crustless, our post-bariatric friends and even our low-carb colleagues are more than welcome to enjoy it with us!

Cheese being the major player, we address the importance of protein being a top macro nutritional priority! We can’t wait to share to share this recipe with you! With just a few simple ingredients thrown into the bowl, you have a tasty ricotta bake ready before you finish an episode of your favorite tv show!

The cheese is a satisfyingly soft food easily digestible after surgery, and the flavor is so rich and indulgent that you could also enjoy it long after the puree phase.

Once you have passed the pureed stage, set it out with some pita chips or olives or make it a fuller dinner by adding your favorite pizza toppings for a crustless pizza dish. We challenge you to jazz up this recipe with the ingredients you have in your kitchen (almost like your very own Chopped kitchen challenge!) that are the most compatible with the Italian flavor of this dish!

In the video we used just half of a teaspoon of garlic, but if you enjoy the robust flavor of garlic as we do, then go bold and use the teaspoon! And trust us that it won’t have a too-intense presence of garlic if you do. Otherwise, enjoy the original measurements for a relaxed garlic flavor.

We lightly baked this dish in the video just long enough, so the parmesan and mozzarella are lightly melted, but if you want to add more of a crunch to the dish(and after the pureed stage), bake a bit longer until you see dark brown bubbles form across the top! Most of us agreed this was our favorite way to enjoy the Ricotta Bake because it added a welcome texture variation. For dinner parties, garnish with some fresh basil on top and watch as your guests love and praise your cooking!

Ricotta Bake Ingredients

  • 8 ounces ricotta cheese
  • ½ to 1 tsp minced garlic
  • 1⁄2 cup grated parmesan cheese
  • 1 large egg, beaten
  • 1 tsp Italian seasoning
  • salt & pepper
  • 3/4 cup marinara sauce
  • 1⁄2 cup shredded mozzarella cheese

Directions

  1. Preheat oven to 450ºF.
  2. Mix ricotta cheese, parmesan, beaten egg, garlic, and seasonings together in a medium sized bowl.
  3. Place cheese mixture in an oven-proof dish.
  4. Pour marinara on top and top with mozzarella cheese.
  5. Bake it in the oven at 450º for about 20-25 minutes (best) or microwave it till hot and bubbly.
  6. Serve and enjoy!
