Chicken Breast Stuffed with Spinach
Chicken is definitely our post-weight loss surgery go-to for protein. Chicken in general is very versatile and hands down can be enjoyed by anyone in the family. When you place chicken in the air fryer it will completely elevate your whole recipe.
Our Spinach Stuffed Chicken Breast recipe will be one of your favorite protein-packed go-to recipes for any day of the week. If you haven’t used your air fryer in a while, this recipe is the perfect reason to bring it back out. We love air fryer chicken because it cooks chicken evenly and keeps it tender and juicy.
We didn’t season our chicken to limit our sodium intake which had no effect on the taste or flavor of our recipe. What makes our Stuffed Chicken Breast recipe unique is most of the flavor comes from the stuffing. Our stuffing is a combination of feta cheese, fresh spinach, low-fat cream cheese, and minced garlic. Feel free to substitute with non-dairy cheeses, if you prefer. Once your chicken breast and stuffing mixture is prepared, it’s basically stuffing and placing it into your air fryer. In a matter of minutes, your meal is prepared.
Cooking with chicken is a personal favorite of ours just because it’s a great source of protein. Your surgeon should have given you specific goals for your daily protein, so make sure you make note of your portion size and keep track. 3/4C Feta cheese
½ C Spinach
3T Low-fat cream cheese
1T Minced garlic
1lb Boneless chicken
Air Fryer Directions
1. In a bowl, mix Feta cheese, spinach, cream cheese and garlic. 2. Cut chicken lengthwise, then cut to make 4 equal portions
3. Use a tenderizer to flatten
4. Spread mixture over chicken. Roll up and place in air fryer basket
5. Air fry at 375 degrees for 8-10 minutes. Flip chicken and cook for an additional 8-10 minutes.
Follow steps 1 through 4 above
Cook for 25 minutes at 400 degrees
