Who’s ready for an easy meal prep? These Low Carb Breakfast Muffins are delicious and can be made in a cinch. I love making these on Sunday nights so that all I have to do Monday morning is get ready, brew my coffee, and grab my tasty to-go low carb breakfast from the fridge! These hold pretty well for the week, but if you really want to seal in the freshness, you can definitely freeze them until you’re ready to heat them up and enjoy!
Another great thing about these, is that as long as you have eggs, some form of vegetable and a protein at home, you have the ingredients you need for a healthy bariatric meal prep! So, you may not even need to take a trip to the store! Plus, these are so cute and bite sized, you could definitely prepare these for your little ones to have a homemade breakfast before school as well. We love when everybody wins!

When preparing your ingredients, bear in mind that these breakfast muffins aren’t super big! So, try your best to chop your veggies into small and even sized pieces so that the egg can easily form and bake around the ingredients! Feel free to add salt, pepper, or your favorite low-sodium seasoning mix into the cups for added flair! You can also serve these with a side of salsa and non-fat Greek yogurt in place of sour cream for added protein!

Egg Muffins Ingredients
- 6 Eggs
- Turkey Sausage
- Veggies
- Seasonings
- Nonstick spray or muffin liners
Directions
- Preheat oven to 375F. Spray cups with nonstick spray or use paper liners
- Decide what other meat and/or vegetables you want to include in your personal egg muffin variation
- Cut the vegetables into small bite-sized pieces
- Brown the meat
- Break 6 eggs into a large container and beat eggs well
- Divide eggs between cups
- Add meat & veggies
- Bake for 25-30 minutes until muffins have risen and are slightly browned and set.
