Y’all! If you’ve gotten this far into the recipe- don’t click away! This stovetop enchiladas recipe is so simple and quick, yet it’s one of the most delicious post-op bariatric recipes we’ve tasted… and we’ve tried A LOT of recipes. We may have made this a few times in the office. I am pretty sure we have all also made it for our families. They had no idea that this was a bariatric enchilada casserole, it has all of the flavor of a regular enchilada dish.
If you’re looking for a low-carb substitute for enchiladas after weight loss surgery, this casserole is it.
All of the flavors mix together for the perfect Mexican style taste we all love (and miss if you’re post op). The cilantro, beans, green chiles, and enchilada sauce make this bariatric recipe taste very similar to actual enchiladas, the only thing that’s missing is the tortilla (and all those carbs 😉).
What’s even better, this bariatric recipe is extremely easy and fast to make. Just throw your ingredients in a pan, let the flavors marry, add some cheese, and you’re done!
