Chicken and Mushrooms
Chicken and mushrooms bariatric recipe
Time for a fun fact! Did you know you can boost the amount of vitamin D in your mushrooms by placing them underneath a sunny windowsill, bottoms up, for a couple hours? Cool, right?
Vitamin D aside, this chicken and mushroomsrecipe provided us with a deliciously creamy meal without the high fat content that comes along with your typical cream-based dinner.
After preparing this dish, everyone who sampled it simply couldn’t get enough! We were even able to enjoy each flavorful bite without eater’s remorse! In addition to the low-calorie Ingredients and full-bodied flavor profile, each serving Is packed with protein! While the protein from the chicken provides necessary energy for optimal brain and body functioning throughout the day, but it also contains mushrooms, a superfood for the benefits it provides to your cardiovascular health.
Not only this, but mushrooms also provide a substantial amount of antioxidants and immune system boosters to help keep you healthy – something we all could use more of this year! Another lesser spoken nutrient these fungal friends provide? Selenium, which is crucial in thyroid function and our metabolism! Not sure about you guys, but that is a benefit we definitely want to have in our diet!
For this, we used white mushrooms, a good source of vitamin D, however you can definitely select your favorite type! Shiitake, portobello, even oyster mushrooms. We love them all!
If the chicken breasts you purchased were a bit thick like ours, feel free to either pound them down to the appropriate size, or you can even slice them in half! Doing so will result in a more even cook and slicing it will double your portion yield! We pounded them to just the right thickness. After that, you’ll have piping hot chicken and mushrooms meal from stove to table ready in minutes!
