Bariatric Friendly Stuffed Peppers
Bariatric Friendly Stuffed Peppers with Green Beans Almondine
If you aren’t an aficionado in the kitchen, no worries! The ingredients in this bariatric friendly stuffed peppers dish are naturally robust and flavorful, so they’ll do most of the work for you! And unlike most recipes that claim 15-20 minutes of preparation, this one is actually pretty quick and simple! Very little cutting to do, but plenty of great texture from the veggies and almonds.
In the video, we didn’t cut off the ends of the green beans to save time (plus they look long and gorgeous when you leave them as is) but you totally can! It’s dealer’s choice! We chose red bell peppers for their appetizing color and natural sweetness, but feel free to substitute with whichever is your preference! A colorful plate is a good indicator of a balanced meal, as long as those colors are natural! For this recipe, multitasking is your best friend!
While the peppers are cooking in the oven, we browned the meat so both ingredients could be ready at the same time. (We also made extra turkey meat to freeze or save for another healthy meal. You know how we like to meal prep). When it came time to load the peppers, we couldn’t help but start drooling! The steam coming up from the food already carried so much flavor, it was hard not to take a bite!

And who can resist a melty, cheesy topping? I tend to purchase reduced-fat or non-fat cheese whenever possible, but again, do what you prefer! This dish is already loaded with plenty of healthy vegetables and is naturally low-carb, so some full-fat mozzarella won’t hurt! (But definitely try reduced-fat at least once. I hardly notice a difference in taste!)
Once you see the cheese all melted, or even a bit crispy on the top, pull out the bariatric friendly stuffed peppers and load them onto your plate for a date-worthy meal!
The satisfying crunch of the green beans paired well with the soft, oven-baked bell peppers, and the almonds in the green beans added a certain level of sophistication that almost made stick up my pinky finger! Delicious meals like this are a great reminder that you can definitely eat healthy without having to eat a salad every day! We hope this quick and easy dinner date recipe becomes a regular feature in your meal prep rotation!
