Healthy Avocado Chicken Salad Recipe | Bariatric Surgery Diet

If you’re an avocado enthusiast, you’ll love this take on chicken salad. Our avocado chicken salad is bariatric friendly, helps you reach your protein intake, and is full of juicy flavor.

The best part about this weight loss surgery recipe is that you can serve it in a number of ways! This avocado chicken salad is one of those recipes you can cook in bulk at the beginning of the week and use it for miscellaneous snacks and meals for the rest of the week. It could be the filling for a lettuce wrap, served in an avocado boat, or eaten by itself, just as a start.

 It can be difficult to find bariatric recipes that are filling AND light. This is one of them.

Quick tip: Squeeze the dish with lemon or lime before you store it in the fridge to keep the avocado from browning.

Avocado Chicken Salad | Bariatric Friendly Recipe

Ingredients

3 avocados

2 cups shredded chicken (you can use a rotisserie chicken or chicken breast you’ve pre-shredded)

1 Tbsp chopped red onion

¼ cup diced celery

1 Tbsp parsley

Fine sea salt and pepper- to taste

1 tsp dijon mustard

2 Tbsp sliced almonds

Directions

1. Mash 2 avocados in a large bowl

2. Add in chicken, onion, celery, parsley, salt, pepper, and dijon mustard to the large bowl

3. Mix all ingredients in the bowl

4. Add in almonds

5. Cut 1 avocado into cubes and add to the bowl

6. Mix with a spoon or fork until ingredients are well combined

7. Serve & Enjoy!

To store this dish- squeeze some lemon or lime on top and chill in an airtight container.
