Gluten-Free Adzuki Bean Protein Bowl for your Bariatric Diet
Adzuki beans… let’s talk about them! These little beans are a superfood and wonderful for your diet post bariatric surgery. Here’s why:
For every 3.5 oz of adzuki beans there’s 7.5g of protein and 7.3g of fiber (That’s 25% of your daily fiber intake in ONE portion). They are naturally gluten-free and have a high amount of antioxidants.

When buying these beans, be aware that they have several different names; such as azuki beans or red mung beans. You can buy them in a can or dry, no need to soak overnight. For this protein bowl recipe, we used canned beans.
Think of this recipe as an Asian-inspired version of the Chipotle protein bowl, but bariatric friendly and gluten-free!
The flavors from the cauliflower rice, salad mix, peas, avocado, and dressing all mix in your mouth to create a perfectly balanced bite of delicious flavor! Whether you’re using this recipe because you’re post-op, vegetarian, gluten-free, or on Keto, you’re sure to be impressed.
Quick tip: If you’re making this recipe in bulk to save for later, don’t add in the dressing! Store the dressing on the side and pour it over your salad mix right before you eat it, so the ingredients stay fresh!

Adzuki Bean Bowl Recipe | Weight Loss Friendly
2 Tbsp cauliflower rice
2 Tbsp cooked adzuki beans
1 Tbsp fresh cilantro
¼ cup diced onions
Sesame seeds to taste
½ small avocado sliced
¼ cup olive oil
⅓ cup rice vinegar
¼ cup white miso
3 Tbsp soy sauce
1 Tbsp toasted sesame oil
2 cups sliced pointed cabbage
2 small carrots shredded
1 cup sliced sugar snap peas
2 Tbsp sesame seeds
1. Add all ingredients for the dressing into a small bowl, mix well, and set aside.
2. Prep your ingredients for the salad mix (shred carrots, slice peas, slice cabbage)
3. Combine all salad mix ingredients in a medium bowl and mix
4. In a small bowl, add in bariatric portions of cauliflower rice, salad mix and cooked adzuki beans
5. Top with cilantro, sesame seeds, and ½ small sliced avocado
6. Serve & enjoy!
