This boneless chicken breast stayed juicy and tender while it baked on a bed of corn, black beans, and salsa. While we do have some carbs in this recipe, there are not a lot of calories from added sugar. Overall you are providing your body with protein from the chicken and black beans, which will help you feel fuller longer.

This recipe was easy to make from beginning to end. This salsa chicken recipe is perfect for when you’re short on time but are looking for a delicious homemade dinner. We chose to go with our favorite restaurant-style salsa which didn’t have much of a spicy kick to it. However, what’s great about this recipe is, if you are looking to add some spice then you definitely can by selecting your favorite salsa. Just be sure to choose a salsa that is low in sugar.

Salsa Chicken Ingredients
1/2 C Frozen Corn
1 Can Black Beans – Drained
1 1/2 C Salsa – Divided (Make sure it’s no sugar added)
1/2 t Cumin
1 t Minced Garlic
2 Small Boneless Chicken Breasts – Cut in Half
Salt & Pepper
Estimated Total Nutrition (for the entire batch):
- Calories: ~400 kcal
- Protein: ~50g
- Carbs: ~30g
- Fat: ~10g
Directions
Mix corn, beans, 1 C salsa, cumin and garlic together.
Spray a loaf pan with non-stick spray.
Add salsa mixture to dish.
Salt and pepper chicken and lay on top of mixture.
Top with remaining ½ cup salsa.
Bake at 350° for 30 minutes.
Serve and enjoy!
